No-Bake Chocolate Peanut Butter Oatmeal Cookies

No one wants to spend the summer in a hot kitchen baking. That is why our friend Emily at Glutenless Apron created this simple and easy No-Bake Peanut Butter Cookie recipe. This tasty dessert features our whole grain rolled oats and a few ingredients that you may already have in your kitchen. The best part about this recipe is that you can make these and keep them in your fridge for up to a week for an easy dessert.

 

Ingredients:

  •   1/3 cup unsalted butter, cut into tablespoon size pieces
  •   1 1/2 cups granulated sugar
  •   1/2 cup milk
  •  1/4 cup unsweetened cocoa powder
  •   2/3 cup creamy peanut butter
  •   2 1/2 teaspoons pure vanilla extract
  •   1/4 teaspoon fine sea salt
  •   1/8 teaspoon espresso powder (optional, enhances the chocolate flavor)
  •   3 cups Bakery On Main rolled oats

    Instructions:

     

     

    1. Line two baking sheets with parchment paper. Set aside.

    2. In a medium saucepan add the butter, sugar, milk, and cocoa powder, place over medium heat. Stir occasionally until the butter is melted, then bring to a boil. Once mixture is boiling around the edges and in the center, cook for 1 additional minute.

    3. Remove from heat and stir in the peanut butter, vanilla extract, salt, and espresso powder. Stir until the peanut butter is melted and the mixture is smooth. Add in Bakery On Main rolled oats and mix until well combined. Allow mixture to sit for 5 minutes before scooping out cookies.

    4. Using a #24 cookie scoop, scoop cookies onto the lined baking sheets. Slightly flatten each cookie with the back of a spoon.

    5. Refrigerate cookies for 45 to 60 minutes or until they have cooled and set. Cover and store cookies in the refrigerator for up to 1 week.

    Makes 17 cookies
